“I’m a chef from Orlando Florida who moved to California about 15 years ago, moved to Los Angeles for Le Cordon Bleu and then worked under some great chefs in New York, Florida and back to Cali to ultimately end up at Chez Loma as the Executive Chef in Coronado California. Give this Victorian home turned restaurant has been a breath of fresh air in my life and their life.”

How has your journey been so far Being a Chef in Coronado, CA at Chez Loma?

Chef Dustin: When I first got to chez loma there was a lot of work to be done and there is still a lot of work to do. As the reviews come in and we get better and better and work on our consistency it becomes more and more rewarding.

How did your chef soul feel when you first started practicing this nomadic approach to cooking?

Chef Dustin: When I first started taking a nomadic approach to cooking it seemed a little unconventional to other chefs as we are told to stay at restaurants for years to grind your teeth and make a name for you under other chefs. My soul told me to go with the wind and learn from others, not just professional chefs but life experiences that ultimately drive my creativity and love for cooking.

What do you enjoy most about being a chef?

Chef Dustin: The thing I love most about being a chef is at the end of the night when service is unwinding, going out into the dining room and overhearing people enjoying their time with us, genuine laughs and comfort brings me joy.

Please share some Deep Insight about the multitude of delicate strategies that you apply in cooking?

Chef Dustin: It’s not much of a secret but cooking from the heart and the results will show. When motivating my team I explain to them that everything we do in life matters and I lead by example. Having integrity with our food and in our life every day is the type of environment I push into the world.
